Used portabella mushrooms. Half black quinoa, half couscous. substituted swiss chard instead of spinach.

This recipe turned out great! I made the quinoa in our rice cooker and it turned out perfect. The only thing I would suggest is adding a little more mushrooms. You definitely need half for the sauce but more sautéed mushrooms in the complete dish would enhanced the flavor. We’re going to dry adding black beans and corn next time we make this to give it even more contrast of flavors. Definitely will make this dish again!

I really enjoyed this dish but i added few things to make it a little more interesting, & i enjoy very flavouful dishes. I cooked the quinoa in vegetable stock. I used 1 full red onion, 250grams of a mixture of mushrooms, soy sauce instead of tamari, 3 fresh small chillis from my garden. I then oven roasted a punnet of cherry tomatoes and added them right at the end for some sweetness. (Sundried toms will also work well) It was absolutely delicious and very simple to make. I look forward to having it again!!

Pretty good! I used red kale instead of spinach because I had it on hand. It wasn’t bad but didn’t wilt as quickly as the spinach would. Also added a small slice of avocado to the ‘sauce mixture.

It turned out well! Especially if you like mushrooms. I used a whole onion instead of 1/2. I made it with a side of roasted broccoli to have a different texture

Cook times were a bit off considering my gas range instead of electric, but flavor was great.

I used tri-colour quinoa and shiitake mushrooms. Very flavourful! Tamari almonds would be a great addition

This was so easy to make and it turned out delicious and filling, we will be making again for sure. I had some tamarind almonds kicking around so I blended about a half cup of them into the sauce with a bit of extra water. It really gave the sauce a more rounded and nutty flavour.

Haven't tried it yet but looks amazing and somewhat healthy which is what I'm going for tummy is amazing
