- 2 Tbsp. coconut oil (for sauteing, or other oil)
- 1 ginger (2-inch piece, peeled and minced)
- 1 red chile pepper (sliced, seeds and ribs removed)
- 32 oz. vegetable broth (container)
- 15 oz. coconut milk
- 3 Tbsp. lemongrass (paste, or 3 stalks of fresh lemongrass, cut and pounded)
- 3 Tbsp. tamari sauce (organic)
- 2 limes (medium, juiced, about Tbsp plus a few wedges for garnish)
- 3 lime leaves (dried, or 2 fresh leaves, bruised before adding)
- 1 handful chopped cilantro

Mmm, very good! I have been wanting to cook with lemongrass for a long time, and finally chose to make this recipe. Only thing I added was onion and garlic, because I didn't think I could make soup without them. It was super delicious!
edit: I make this often now, adding cubed tofu, spinach,onions, garlic, frozen peas and serving over a bowl of rice. So yummy
