- 1 lb. mushrooms (fresh, wild, if possible, depending on the season, morel, oyster, chicken of the woods, hen of the woods, porcini, etc.)
- 2 yellow onions (peeled, roughly chopped)
- 2 russet potatoes (peeled, roughly chopped)
- 1 qt. heavy cream
- 1 lb. butter
- 4 qt. water
- 2 Tbsp. fresh thyme (picked)
- 1/2 head garlic (peeled, roughly chopped)
- salt
- freshly ground pepper
- mushrooms (Stewed)
- compote (Warm Fruit)
- 4 figs (fresh, quartered)
- 4 Tbsp. pecorino (crumbled truffle, or other hard, crumbly cheese)
- 4 tsp. chives (minced)
