- 2 cups mushrooms (flavorful, such as shiitake, chanterelle, or oyster mushrooms, cleaned, trimmed, and cut into half inch to inch pieces)
- 2/3 cup brandy (vermouth, or dry white wine)

- 1/3 cup shallots (peeled and minced, OR 1/3 cup of yellow or white onion, finely chopped)

So good!! Mixed it up with a shot of whiskey instead of the wine. Controversial but it turned out so good. Will definitely be having to again. Such a nice warm winter dish.

Easy to make, very delicious. This is the best risotto recipe I’ve tried and the only one I use now. I used vegetable broth instead of chicken (I’m a vegetarian) it was perfect. Highly recommended.

Made this recipe with some leftover Sushi rice I had and turned out amazing!!! Now my familly will always ask me to make it every now and then!!

Didn’t have Parmesan so used the Pecorino in the fridge; the meal turned out great anyway. I’ll definitely make this a regular treat

Everything turned out except that it had a sweet taste-maybe because I used brandy? Didn’t really like the sweetness in it

Turned out well and creamy. My first time making risotto so I appreciated how easy it was to follow the instructions. I adding onions and parm cheese.

Easily the best mushroom risotto I've ever had. Recommended to throw a bit of msg in as well, but still amazing without it.

Yummy! Made a couple times now. Replaced the white wine with Marsala this time. Turned out great. Don’t rush the process and you’ll get the perfect amount of al dente.

Very tasty! I used vegetable broth and cut the recipe in half. I did not have the Parmesan cheese but it was still very creamy.
