- 1/2 cup butter (divided)
- 2 lb. mushrooms (cut into bite-sized pieces , I used a combo of baby bellas, shiitake and oyster mushrooms)
- 6 cloves garlic (thinly sliced)
- 1 cup dry white wine
- 2/3 cup vegetable stock
- 2 Tbsp. balsamic vinegar
- 3 sprigs fresh rosemary
- 1/2 tsp. crushed red pepper flakes (or more/less to taste)
- 2/3 cup grated Parmesan cheese (freshly-, plus extra for serving)
- 1/2 cup toasted pine nuts (divided)

This really didn’t work. It is basically stewed vegetables with pasta. It is not a cohesive dish and the sauce was lacking the right flavors. I had to add cream and a ton of Parmesan to make it even resemble a pasta dish and then I didn’t even eat it. My husband didn’t care for it. I added shrimp and he said that was the one good thing this recipe had going for it.

Really good! I added about 2/3 cup of heavy whipping cream and served with black bean pasta for extra fiber!

Holy smokes... this is amazing. So good. Used GF noodles and couldn't even tell because it was so flavorful.
