Really good - it's a bit pungent, so I threw it on a bed of spinach. I like the idea of quinoa. In the directions, they failed to incorporate the nuts, so they were forgotten, as was the cilantro ...

Not bad, not great. Hubby made it as I was sick. link is to a different curry than the one depicted. Easy to make meal, but need to add protein.

I used 500g mushrooms and substituted 2 heaped tablespoons of peanut butter for the cashews and half a tin of crushed tomatoes for fresh as I had run out. I used chilli flakes and also added some coconut milk powder. It was yum.

This was surprisingly tasty. If you like mild curries, then this is for you. But you can spice it up easily enough. I served it with cauliflower rice, and it went really well together.

Turned out well.
I added fresh chilli instead of powder.
I will be making again. It was yummy!!!!!!

Tasty flavoursome dish. Only wish it could be a bit spicier. The cashew turned out better than expected (I'm not vegan, didn't know what to expect).
