  • 450 grams mushrooms (packs of, baby Portobellos or chestnut mushrooms are fine, button mushrooms won’t work in this, sliced fairly thick)
  • 6 large carrots (– scrubbed and sliced into 2cm pieces)
  • 1 yellow onion (large, – diced)
  • 2 cloves garlic (– peeled and chopped finely)
  • 2 cups vegetable stock
  • 1 1/2 cups red wine (almost half a bottle)
  • 1 tablespoon tomato purée
  • 2 teaspoons sea salt
  • 1 handful fresh thyme leaves
  • 2 teaspoons italian seasoning (dried, /mixed herbs)
  • 1 tablespoon plain flour
  • 1/3 water (a cup of)
  • 1 packet tagliatelle (or similar pasta)
