- 450 grams mushrooms (packs of, baby Portobellos or chestnut mushrooms are fine, button mushrooms won’t work in this, sliced fairly thick)
- 6 large carrots (– scrubbed and sliced into 2cm pieces)
- 1 yellow onion (large, – diced)
- 2 cloves garlic (– peeled and chopped finely)
- 2 cups vegetable stock
- 1 1/2 cups red wine (almost half a bottle)
- 1 Tbsp. tomato purée
- 2 tsp. sea salt
- 1 handful fresh thyme leaves
- 2 tsp. italian seasoning (dried, /mixed herbs)
- 1 Tbsp. plain flour
- 1/3 water (a cup of)
- 1 packet tagliatelle (or similar pasta)
