Absolutely a comfort food. Only change I made was 1/2 cup of barley versus 1/4 and shiitake instead of white button mushrooms. I enjoy it a bit more creamy.

This soup is delicious!! I'm trying to eat less meat and this soup, with the barley and mushrooms makes it not only delish but filling as well. I added garlic, oregano and pinch of thyme for more flavor! It's a repeat soup!!
