- 1 cup crushed tomatoes (canned, with added puree, from 28-ounce can)
- 2 cups low salt chicken broth
- 8 oz. penne pasta (multi-grain)
- 1/2 cup chopped fresh cilantro (divided)
- 1/2 cup cheese (grated kasseri, divided, substitute a mild parmesan or pecorino if you cannot find kasseri)
