- 2 stalks celery (diced)
- 2 Tbsp. tomato paste
- 4 cups vegetable broth
- 2 cups stout beer (Irish, recommended: Killian’s)
- 4 carrots (peeled and sliced diagonally into 1/2” chunks)
- 2 parsnips (carrot sized, peeled and sliced diagonally into 1/2” chunks)
- 2 potatoes (peeled and cut into 1/2” chunks)
- 1 turnip (large, peeled and cut into 1/2”chunks)
- 3 Tbsp. pearl barley
- 1/2 tsp. marjoram (dried)
- 1/2 tsp. dried thyme
- 2 bay leaves
- 1 sprig rosemary
- 1 tsp. salt
- freshly ground pepper (to taste)
- 2 Tbsp. chopped parsley (finely)
