- 3 red bell peppers
- 2 Tbsp. olive oil (divided in half)
- 3/4 cup diced onion
- 3 cloves garlic (crushed through a press)
- 1/2 tsp. cumin
- 1/2 tsp. dried oregano
- 1/4 cup tomato paste
- 1 1/4 cups stock (either beef, vegetable, or chicken)
- 1/3 cup pomegranate molasses
- 1/2 tsp. crushed red pepper
- 2 Tbsp. red wine vinegar
- salt (to taste, I use 3/4 teaspoon total, but it depends on the saltiness of your stock)
- 4 1/2 lb. lamb shanks (about 3 large, or 6 small)
- 1/2 cup chopped walnuts
