I was pretty skeptical about this recipe but I had a serious pregnancy craving for banana bread so my stomach over ruled any doubts I had. I'm pleased to say that it turned out quite good. Don't get me wrong, it doesn't compare to the real deal but for a quick banana bread fix, it was right on the mark. I followed the advise of some of the commentors on the recipe page and didn't use the whole egg. I wisked a small egg and added 2 tbsp of egg to the mix. I used 1 whole small banana, added about 2 dashes of cinnamon and another 2 of coriander. I had only full fat milk so I used that and I didn't have stevia so I used regular sugar instead. (might try honey next time) And finally I added about 1 tbsp of both chopped walnuts and small golden raisins. My 2 year old and I ate it almost as fast as it took to make it.
