- 25 foccacia bread (herbed)
- arugula (As needed)
- 1 1/2 lb. mortadella
- 1 1/2 lb. honey ham
- 1 1/2 lb. prosciutto
- 1 1/2 lb. smoked mozzarella cheese
- salad (As needed olive)
- 25 olives
- 25 pieces pork (jerky)
- 1/4 tsp. allspice
- 1/4 tsp. dill seed
- 1/4 tsp. mustard seed
- 1/4 tsp. black pepper
- 4 cups pork fat (room temperature)
- 1 cup Kalamata olives (pitted, chopped)
- 1 cup Queen olives (pitted, chopped)
- 1/4 cup capers (minced)
- 1 red onion (minced)
- 1 bulb fennel (thinly sliced)
- 1 grapefruit (zested and juiced)
- 1 orange zested (and juiced)
- 1 lemon zested (and juiced)
- 1/4 cup Italian parsley (minced)
