- 1 cup sliced olives (I use a mixture of green and kalamata)
- 1/4 cup finely diced red onion
- 1/2 cup marinated artichoke hearts (chopped)
- 1/2 cup roasted red pepper (chopped)
- 2 garlic cloves (minced)
- 1/4 tsp. crushed red pepper flakes
- 1/2 tsp. oregano
- 2 Tbsp. olive oil (Pompeian)
- 1 Tbsp. Pompeian Red Wine Vinegar
- salt
- pepper
- 8 slices Italian bread (or French, or use ciabatta but cut horizontally)
- 12 slices provolone cheese
- 1/2 lb. sliced salami (thinly, I use genoa)
- 1/2 lb. mortadella
- 1/2 lb. capicola (or prosciutto)
- olive oil (more Pompeian, for bread)
