- 1/2 cup pasta water (reserved)
- 2 Tbsp. olive oil
- 3 garlic cloves (minced)
- 4 oz. dried tomatoes (sun-, sliced)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. paprika
- 1 lb. chicken tenders (cubed)
- 1/4 tsp. crushed red pepper ({more or less for spice})
- 1/2 cup cream (half and half {or)
- 1 cup shredded mozzarella cheese
- 2 cups spinach (tightly packed)
- 1/2 cup fresh basil leaves (chopped)
- 1/4 cup fresh parsley (chopped)

I changed the recipe a little. I used a sweet smoky paprika and added a little more than it called for. I used my iron skillet to cook the dish and it really brought out the color in the chicken and pasta. I also added a little 2% milk in addition to the half and half and pasta water. The sauce thickened quickly and I wanted it a little thinner.
My husband really liked it and requested we add it to our meal rotation. The flavor was great and I think I would love it even without the chicken as a side dish.
