  • 3/4 cup heavy whipping cream
  • 3 tablespoons granulated sugar
  • 3 tablespoons semolina flour
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 1 teaspoon rose water
  • 600 grams mozzarella cheese (shredded, preferably fresh)
  • 3 tablespoons granulated sugar (omit if your cheese does not taste salty, *see note)
  • 2 teaspoons rose water
  • 1 pound kataifi (or kunafa, /kadaifi pastry, fresh or frozen. If using fresh, freeze for an hour for easier cutting. If using frozen, thaw slightly)
