- 1 cup gluten (free quick oats, I used Bob’s Red Mill Gluten-Free Oats)
- 1 cup all purpose gluten free flour (I used Pillsbury gluten-free)
- 1/3 cup unsweetened shredded coconut
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/3 cup brown sugar (packed)
- 1/4 cup cane sugar
- 1/4 cup coconut oil (melted or softened, can substitute your favorite baking oil)
- 1/4 cup dairy-free milk (unsweetened plain, beverage)
- 1 Tbsp. maple syrup
- 1 1/2 tsp. flax seeds (finely ground, about 2 teaspoons ground flaxseed)
- 1/2 tsp. vanilla extract
- 1/3 cup semisweet chocolate chips (dairy-free and gluten-free, I like Enjoy Life)
- 1/3 cup toasted pecans (chopped raw or lightly, omit for nut free)
