- 4 lb. beef roast (boneless chuck, divided into 3 or 4 pieces)
- 1 lb. carrots (peeled and thickly sliced)
- 1 lb. celery (sliced)
- 2 onions (peeled and sliced)
- 2 envelopes onion soup mix (i.e., Lipton)
- 10.5 oz. cream of celery soup
- 10.5 oz. cream of mushroom soup
- 2 soup (cans' worth of water)
- 6 Tbsp. all purpose flour
- 5 cubes beef bouillon (see note)
- 2 tsp. garlic powder
- 2 tsp. ground pepper (fresh)
- 4 russet potatoes (medium, peeled and cut to bite size, to be added during last half of cooking time, optional)

Loved it! My slow cooker definitely took way longer to cook everything up so it was more like 15 hours to get roast to fall apart with fork. But the wait was worth it! My daughter nicknamed it the mommy special because she said it was sooo good. Served over egg noodles. Yum!

It was fantastic. The last 2 pot roast i made were tough. You could tare this roast with a spoon. No knives necessary. It also had great flavor. Will definitely make again soon. My husband and son loved it.

This pot roast was the best that I've ever tasted. It was very flavorful, moist and melt in your mouth tender! This is officially my go to pot roast recipe.
