- 1 yellow onion (diced)
- 3 garlic (gloves, minced)
- 1 knob fresh ginger (grated, about 2 tablespoons)
- 3 cups cubed pumpkin (fresh, or squash)
- 2 cups sliced carrots (thick)
- 2 cups chickpeas (cooked, 1 x 400g can, drained and rinsed)
- 1 1/2 tsp. ground cinnamon
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander (each, and paprika)
- saffron (Pinch ground)
- 800 mL tomatoes (can whole)
- 1 cup water (or vegetable stock)
- 1/4 cup dried currants (or raisins)
- 1/4 cup dried apricots (roughly chopped)
- 2 Tbsp. harissa
- 1/4 cup toasted slivered almonds
- 1 handful cilantro leaves (fresh)
