- 1 red onion (large, thinly sliced)
- 2 cloves garlic (minced)
- 1/2 cup golden raisins
- 1 Tbsp. ras el hanout (Moroccan spice blend or garam masala)
- 1 tsp. fine sea salt
- 1/2 tsp. black pepper
- 1/4 tsp. crushed red pepper flakes
- 1 cinnamon stick
- 1 1/2 Tbsp. fresh lemon juice
- 28 oz. crushed tomatoes
- 30 oz. chickpeas (rinsed and drained)
- 3/4 cup water
- 1 bunch kale (tough stems discarded and roughly chopped)
- 1/2 cup unsalted roasted almonds (roughly chopped)
- 4 cups couscous (cauliflower, sautéed in a little olive oil until tender or regular cooked couscous for serving)
- plain yogurt (for serving, optional)
