- 3 russet potatoes (peeled and chopped)
- 1 sweet potato (peeled and chopped)
- 6 carrots (peeled and chopped)
- 12 mini sweet peppers (halved, or two red bell peppers, chopped)
- 3 inches ginger (piece of, peeled and grated)
- handfuls fresh dill (or basil, chopped)
- 3 scallions (diced)
- 1 Tbsp. sesame seeds
- 1 handful slivered almonds
- 1 tsp. ground cumin
- pinches saffron (optional)
- salt (to taste. I use sea salt.)
- olive oil (for cooking)
- lemon wedges (or lime wedges)
- tahini (sauce)
- harissa
- Sriracha (or red chili flakes)
- olive oil
- medjool dates
- dried figs
- mint (tea)
- greek yogurt (or labne (Lebanese strained yogurt) sprinkled with za'atar)
- olives (assorted)
