Being a vegetarian for over 30 years - I found this recipe really delicious and a new "way" to use carrots in a meal. I didn't have pine nuts - so left them out! Didn't have Moroccan Spice either but looked up how to make this and added it - as called for in the recipe. Would definitely make it again.
