- 3 kilograms shoulder of lamb (boned, fat removed and cut into 4cm/1½in cubes)

- 2 kilograms tomatoes (/4½lb ripe, or 4 X 400g/14oz can tomatoes, coarsely chopped)
- 5 Tbsp. honey
- 1 pomegranates (large or 2 small)
- 800 grams couscous (/1¾lb)
- 6 Tbsp. olive oil
- 2 lemons (juice only)
- 1 liter chicken stock (boiling, or water)
- sea salt
- freshly ground black pepper
- 4 Tbsp. fresh mint (chopped, or coriander)
- 1 lime (cut into wedges)
- 1 bowl Greek yoghurt

I've made this loads of times. I normally make a double batch of the spices in a jar so I can add smaller qtys
