- 1 shoulder of lamb (trimmed and cut into 5cm/2in chunks, about 1.1kg/2½lb meat in total)
- 2 onions (large, grated)
- 2 Tbsp. olive oil
- 2 Tbsp. oil (argan)
- 3 cloves garlic (crushed)
- 570 mL tomato juice
- 400 grams chopped tomatoes (tinned)
- 115 grams dried apricots (cut in half)
- 55 grams dates (cut in half)
- 55 grams sultanas (or raisins)
- 85 grams flaked almonds
- 1 tsp. saffron (stamens, soaked in cold water)
- 600 mL lamb stock
- 1 Tbsp. clear honey
- 2 Tbsp. coriander (roughly chopped)
- 2 Tbsp. flat leaf parsley (roughly chopped)

One of the best meals I’ve ever made.
The lamb ended up so tender and juicy.
The flavors from the apricots, dates, raisins, and honey, playing off the low heat from the spices, topped by the cilantro and parsley, all held together by the tomatoes, onions, and garlic - vunderbar!

Awesome. I left out the apricots and dates and halved the cinnamon- I didn’t want it too sweet. I served with polenta. So good! Will do this again for sure.

Flavoursome, I find cayenne pepper a bit hot so halved that and the dish still had a kick 😛
