- 1 garlic clove (small)
- 2 tsp. nigella seeds (briefly toasted before using)
- 2 tsp. coarse salt
- 1/4 cup extra virgin olive oil
- 1 onion (large, halved and thinly sliced)
- 2 Tbsp. water (saffron, see below)
- 1 tsp. ground ginger
- 1 tsp. pure vanilla (optional)
- 1/2 tsp. ground black pepper (freshly)
- 8 oz. yukon gold potatoes (peeled and cut into 1-inch dice)
- 2 tomatoes (small, peeled, halved, seeded, and diced)
- 2 Tbsp. chopped cilantro (finely)
- 1 lemon (or to taste)
- 12 Kalamata olives (pitted, soaked in water to remove excess salt and vinegar, and drained)
- 1 preserved lemon (pulp removed, rind rinsed and quartered)
