- 2 cups butternut squash (peeled and cubed)
- 2 oz. dried apricots (roughly chopped)
- 15 oz. cherry tomatoes (in juice or chopped tomatoes)
- 2 cups chicken stock (from a stock cube)
- 4 slices lemon (fresh, unwaxed, halved)
- 4 Tbsp. almonds (slivered, flaked, to garnish, optional)
- 1 handful mint leaves (to garnish, optional)
- 1 pinch chilli flakes (dried, to garnish, optional)
- 1 lemon (zesf only, to garnish, optional)

This was very tasty and complex in a good way. I substituted coconut sugar and used breasts instead of legs. It was a LOT of prep work, so I probably won't make it often, but will certainly do it again.

It's not bad by any means, but it's probably not something I'd make again.
Unique taste, worth trying.

I really loved this recipe. I used a sweet potato instead of squash. I served it with Israeli couscous. Delicious.

Awesome! Although I was too lazy to do the extra bits at the end. Would be even better with the toasted almonds.
