- 1/4 tsp. maple syrup (dark, plus more if needed)
- 6 carrots (unpeeled, cut into thirds)
- 2 yellow onions (unpeeled, quartered)
- 2 leeks (white and green parts, cut into thirds)
- 1 bunch celery (including the heart, cut into thirds)
- 4 red potatoes (unpeeled, quartered)
- 2 sweet potatoes (unpeeled Japanese or regular, quartered)
- 1 garnet yam (unpeeled, sweet potato, quartered)
- 8 cloves garlic (unpeeled, halved)
- 1 bunch fresh flat leaf parsley
- 1 strip kombu
- 12 black peppercorns
- 4 whole allspice berries (or juniper berries)
- 2 bay leaves
- 1 Tbsp. lemon juice (freshly squeezed, or white or apple cider vinegar)
- 1 chicken carcass (organic, or 2 pounds chicken bones)
- 8 qt. filtered water (cold, plus more if needed)
