  • 1 pound beef (sirloin, trimmed of fat and cut into ¼-inch-thick strips)
  • 3 cloves garlic (minced)
  • 1 yellow onion (coarsely chopped)
  • 1 teaspoon ground turmeric (each, and ground cumin)
  • 1/2 teaspoon ground cinnamon (each, and ground black pepper)
  • 1/4 teaspoon red pepper flakes
  • 3 cups beef broth (low-sodium, divided)
  • 2 sweet potatoes (peeled and cut into 1½- to 2-inch chunks)
  • 1 1/2 cups diced tomatoes (jarred or boxed unsalted, with juices)
  • 1 1/4 cups dried chickpeas (soaked in water for 24 hours, TIP: If you don’t have time to soak chickpeas for 24 hours, boil them for 1 hour, until al dente, then drain and set aside.)
  • 1/3 cup apricots (sliced dried unsweetened)

    Delicious. I did not have the time to put it in the crock pot, so I just simmered it on the stovetop for two hours. Served with flatbread - a perfect accompaniment.
