- 700 grams chuck steak (– a stronger flavour than shin but adds richness to the tagine)
- 1 brown onion (large, – peeled and diced)
- 1 red onion (large, – peeled and diced)
- 1 handful pitted prunes

- 1 can chickpeas
- 1 handful blanched almonds
- 3 fresh tomatoes
- 1 can tomatoes (whole)
- 1 squash (medium sized, – peeled, diced into large chunks)
- 1 bunch fresh coriander
- 1 1/2 Tbsp. paprika
- 1 1/2 Tbsp. cumin
- 1 Tbsp. cinnamon
- 1 Tbsp. ground ginger
- 2 Tbsp. ras el hanout (Moroccan seasoning – blend of spices)
- 1 tsp. chilli flakes (optional)

- pepper
- 1 liter vegetable stock
