  • 1 onion (medium, finely chopped)
  • 1 medium carrot (coarsely grated)
  • 1 1/2 tablespoons spice mix (Moroccan)
  • 1 1/3 pounds ground beef
  • 2 tomatoes (large, finely chopped)
  • 2 tablespoons chopped cilantro (plus additional leaves, to serve)
  • 8 crepes (frozen, thawed)
  • 1/2 cup plain yogurt
  • 1/2 teaspoon grated lemon peel

    Directions

    1. Preheat the oven to 400°F. Spray a 13 x 9 inch baking dish with no stick cooking spray.
    2. Heat oil in a large skillet on medium heat. Add onion and carrot; cook, stirring, 5 mins, or until softened. Add spice mix; cook, stirring, 1 min, or until fragrant.
    3. Add ground beef; cook, stirring with a wooden spoon to break up lumps, 5 mins, or until browned. Add tomato; simmer, uncovered, 3-4 mins. Remove from heat; stir in cilantro
