- 2 Tbsp. brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 apple (medium, : peeled, cored and grated, about 1 cup / 250 ml grated apple)
- 1 medium carrot (peeled and grated, about 1 cup / 250 ml grated carrot - I prefer to use the fine grater rather than the coarse one for the carrots)
- 1 cup crushed pineapple (drained)
- 1/2 cup coconut (unsweetened)
- 1/2 cup raisins
- 1/2 cup chopped pecans (or walnuts, optional)
- 1 egg
- 1 1/2 cups milk
- 1/2 cup pineapple (orange or apple juice, you can use the juice drained from the crushed pineapple)
- 2 Tbsp. vegetable oil

I’m not an 0atmeal lover but I love this recipe! It’s full of interesting flavors and textures. It’s delicious right out of the oven and just as good microzapped a few days later.
