    Excellent low-cal breakfast! I carmelized diced onions first, added diced peppers to the sauteing onions, omitted the cucumber, and sprinkled all veggies (with diced tomatoes and spinach) on top of each cup. Added a bit of parmesan cheese. Without onions it is a bit bland for my family.

    It was very good. I made mine with spinach, tomatoes, and cheese.
    i didn’t add peppers or cucumber (personal preference) and just used diced tomatoes and juliette spinach, it was pretty good but a little too bland for my taste.

    Prepared the 1st batch, more or less according to the recipe, and it was decent but not great. And unless you carefully seed and thoroughly dry the cucumber it emits a bit too much moisture, adversely affecting the texture. The 2nd batch was better thanks to substituting some carmelized onion for the cucumber plus adding a little shaved Parmesan.

    It was good but the centre wasn’t cook all the way through, I think I need to leave it in the oven longer than 12 minutes. Although I did take it out at the end of 10 minutes to sprinkle some grated cheese on top, then put it back in the oven for the remaining 2 minutes. I am also thinking of trying ramicans instead of using the muffin pan, but am not sure if it will work?

    Delicious! This will now be one of my favorite breakfast meal preps. I love that you can have them already made for another day. I have not tried them after being frozen but I am sure they will taste fine. I used my own vegetables: red peppers, onions, and spinach. After they came out of the oven, I even sprinkled them with a little cheese. Tasty!

    This a great base recipe. It's quick, easy, versatile, and healthy. Eggs in general are bland, so season as you would any omelet. I added a clove of garlic, salt, and pepper and used feta in place of the cheddar.

    As it is, this recipe is healthy, but blander than Kristen Stewart's acting in Twilight. It would benefit from some added meat, sauce, cheese, spices -- anything to make it taste less like the kitchen floor and more like palatable food. Will not subject myself to this muffin sized mistake again.

    I loved this recipe because it's quick and the leftovers are amazing! One thing I would recommend is using paper cupcake liner when baking, instead of using grease.
