- 1/2 lb. ground pork (high-quality, hit the farmers market or buy beautiful ground pork from Little Foot Farm)
- 1 egg (large, organic)
- 4 ramps (trimmed, minced, divided)
- sea salt
- freshly ground black pepper
- 3 Tbsp. butter
- 1/4 lb. mushrooms (or more! or morel, halved, I always halve morels to check for critters)
- 1/2 cup red wine (the same wine you plan to drink with the burger!)
