  • 1/2 cup yellow onion (diced)
  • 2 cloves garlic (finely minced)
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 15 ounces red kidney beans (dark, drained and rinsed)
  • 14 1/2 ounces diced tomatoes (petite, drained)
  • 4 ounces green chilis (diced)
  • salt
  • pepper
  • bread (Navajo Fry, recipe follows)
  • romaine lettuce (chopped)
  • cheddar
  • jack cheese
  • Roma tomatoes (diced)
  • sour cream
  • black olives (sliced)
  • avocados (diced)
  • salsa (fresh)
  • hot sauce (you could add cayenne pepper to the taco filling as well)
  • cilantro (chopped)
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon active dry yeast
  • 1/2 teaspoon salt
  • 1 cup milk (warm, 110 degrees)
  • 1 tablespoon butter (or shortening, melted)
  • vegetable oil (for frying, sometimes I use half olive oil)

    Everyone loved them. We ate them with forks. I made a double batch of the bread and actually cooked them on my stove top griddle (with extra oil).
