It needs to simmer for about an hour as the final step. It’s important that the mushrooms release their juices. Added salt.

Totally delicious!! When I visited Rome I ordered a mushroom soup there that was to die for. Today I got to make it at home with this recipe so YUMMY!! Only thing I changed is at the end I used a hand mixer to blend up some of the mushrooms and onions to give the soup a heavier texture and I added some green scallions to top it off. Super awesome. Will be making this again for sure!

Turned out delicious. Exactly the savory mushroom experience I was looking for. I added a sprinkle of dried thyme during mushroom sauté. Then used two cups fresh coconut milk blended from young coconuts and only 1.5 cups beef broth. I added 1/3 cup of quinoa with the broth to cook into the soup (inspired by another recipe) a bit of beef bouillon. To serve topped with truffle salt & squeeze of lemon

Amazing recipe! Delicious and flavorful, perfect for lunch. It's definitely a "must do" in my recipe rotation.
