- 2 lb. dark meat (bone-in, skin-on, legs, thighs, wings)
- 1 tsp. salt
- 1 tsp. paprika
- 1/2 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 1/2 cup corn oil
- 1/2 cup all purpose flour
- 1 1/2 cups chopped onion
- 1 1/2 cups chopped celery
- 1 cup chopped green bell pepper
- 8 cups chicken stock (warm)
- 1/4 tsp. Tabasco Sauce (or to taste, we left this out because I don’t care for spicy foods)
- 1 lb. andouille sausage (sliced 1 inch thick)
- 1 1/2 lb. okra (fresh, or 2.5 cups of frozen okra, defrosted and sliced)
- 1 1/2 Tbsp. filé powder
- 2 lb. crab legs (defrosted)
- 3 lb. shrimp (cooked, defrosted)
- cooked rice (to serve)
