My family loves this bread! I would recommend making it in smaller sized pans. If you do use 8"x4", use three pans instead of two so the center bakes better, and bake a little longer than the recipe says until the center tests done. I also have done 2 cups white flour, 1 cup wheat flour.

Perfect. I cut down the sugar and used half oil half apple sauce. I’ve made it three times this month to try to use some of the zucchini we’re getting from our garden. Delicious every time.

This turned out fabulous! The only thing I did differently, was I used coconut oil instead of vegetable oil--out of necessity, I had no other--and everyone was very happy with how it finished.
I made extra loaves (couldn't waste all of that shredded zucchini!) and froze them. Great recipe!

It’s much to sweet. I baked at 325• for 1 hour in a pre heated oven and the middle isn’t done. I’m very disappointed.

Excellent. I added raisins, because I like them and reduced the sugar just a bit to 2 cups
