- 1 cup sweet onion (chopped, from about half of a large onion)
- 2 garlic cloves
- 1 cup olive oil (we use regular, not extra virgin; see notes)
- 2 lb. eggplants (see notes)
- 1/3 cup red wine vinegar
- 12 oz. black olives (sliced & drained; buy them sliced to save time)
- 7 oz. pimiento-stuffed green olives (Manzanilla, drained)
- 2 Tbsp. sugar
- 6 fresh basil leaves (or 2 teaspoons dried basil)
- 1/2 tsp. salt
- 1/3 tsp. black pepper
