- 4 slices bacon (lean, smoky, chopped)
- 1 kg sirloin (minced)
- 1 onion (large, finely chopped)
- 4 cloves garlic (finely chopped)
- ground black pepper (Freshly)
- 2 Tbsp. tomato puree
- 450 grams tomatoes (tinned diced fire-roasted)
- 2 Tbsp. sweet paprika (smoked, for mild mole, or chilli powder for spicy mole, a couple of palmfuls)
- 1 Tbsp. coriander (a palmful)
- 2 Tbsp. unsweetened cocoa powder
- 1/2 tsp. ground cinnamon
- salt (if necessary)
- 200 grams cheddar (grated or crumbled extra-mature white)
- 1 red onion (small, finely chopped)
- vegetables (Hot pickled, drained, chopped, for serving)
