Description
A hint of spice and citrus give a Cuban flair to this easy pork loin roast. The recipe is a Yummly original created by Sara Mellas.

- 1 boneless pork loin roast (about 3 lbs.)
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 4 cloves garlic
- 1 Tbsp. extra-virgin olive oil
- 2 tsp. honey
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 orange
- 1 lime
- 1 handful fresh cilantro (small)

Directions
- Preheat the oven to 350°F.
- Cover a roasting rack with a sheet of aluminum foil, and poke small holes all over with the tip of a sharp knife. Line a roasting pan with heavy-duty aluminum foil and position the roasting rack inside of it.
- Pat the pork loin dry with paper towels, then season it liberally on all sides with salt and black pepper. Make four 1/4-inch-deep slits throughout the pork loin. Stuff a garlic clove inside each.

Lots of flavor and really moist. I paired it with honey garlic roasted carrots and mashed potatoes to round out the meal and it was delicious.
