- 2 boneless chicken breasts (grilled skinless, sliced into strips)
- 1/2 cup cherry tomatoes (sliced)

- 1 avocado (ripe, sliced)
- 1/4 cup crumbled feta cheese
- 1 cup tortilla strips (crispy, or crumbled tortilla chips, *see note below)
- 2 Tbsp. chopped fresh mint (for garnish, optional)
- 1/4 cup lime juice (fresh squeezed, about 3-4 limes)
- 2 Tbsp. agave
- 1 tsp. sea salt
- 1 tsp. lime zest (about 1 lime)
- 10 fresh mint leaves (large)
- 1 garlic clove
- 1/2 tsp. Dijon mustard
- 1/2 cup canola oil
