- 2 plantains (peeled and chopped small, about the same size as the beans – I used green plantains but black ones would be great, too)
- 2 cups black beans (cooked, rinsed and drained if canned)
- pepper
- salt
- oil
- 1 Tbsp. coconut oil
- 3 cloves garlic (pressed or minced)
- 1/4 cup rum (optional, I did not use it)
- 2 Tbsp. agave nectar
- 1/4 cup water
- 1 Tbsp. nutritional yeast
- 1/2 tsp. seasoning (no-salt)
- 1/4 cup fresh lime juice (from 2 limes)
- 1/4 cup mint (fresh chopped)
