- 1 tsp. vanilla

I can confirm—this cake is yum-o and not difficult! I might bump the spices a tad next time. You don’t really feel the carrot or the pineapple in your mouth, just cool yummy cake.

I am trying to eat healthier, so I substituted 1 cup flour for 1 of the 2 cups of sugar, substituted apple sauce unsweetened for half the canola oil. Added raisins and walnuts and it was super moist and delicious!!! Didn’t miss the 1 cup sugar, nor the extra oil!

One of the best carrot cakes I have ever eaten. It will be made again and again and again. Substituted walnuts for pecans and walnut oil for vegetable oil. Fabulous! Enough said.

Easy and GOOD! This was my first time baking anything from scratch, and it turned out well. I did leave the pineapple out. Multiple thumbs up from friends and family!

Very delicious and moist. Used a half cup each of apple sauce and grape seed oil. Added golden raisins to batter and toasted the pecans for the outside. Made a two layer cake. Loved it.

Amazing!! Tons of compliments and loved so much That two days later, I doubled the recipe and made it again!!
I used less sugar in the frosting and added about a cup of chopped walnuts into the mix. I also skipped the nutmeg.
I sliced it in half and frosted the top of the first layer and plopped the top on- and frosted that. I chopped walnuts again and used baking paper and after lightly frosting the sides/edges, sprinkled the walnuts all around the edges and used the paper to push them onto the sides, sort of making a walnut “crust” all around. It was amazing!!! Everyone loves it!! The pineapple is a great trick for moisture. I usually use yogurt but gave this a shot and super glad I did!

Made a few times now and awesome every time! I use closer to 2 3/4 cup confectioners sugar and find it plenty sweet. This has become a staple!

Yummy!!!! Even my usually picky child went back for extra servings. The only thing I would change is use only 3 cups of confectioners sugar in the icing to make it a little less sweet.

I made this cake for my husbands birthday. It was the best carrot cake we’ve ever had!! I added about 1/2 cup of coconut. I will definitely make again.

literally the moisted cake I have ever made and so so delicious. If I wouldn't have made it myself, I would of thought it came straight for a backery. Hats off to the author. 😁😍
