  • 1 1/4 cups oil
  • 4 large eggs
  • 1 pound baby carrots (packge, finely grated)
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2 1/2 teaspoons cinnamon
  • 12 tablespoons unsalted butter (room temperature, 1½ sticks)
  • 16 ounces cream cheese (room temperature)
  • 8 cups powdered sugar (sifted)
  • 1 tablespoon pure vanilla extract

    Lovely and moist. Had lots of frosting left to freeze. I only put 1 cup of sugar in the cake mixture, and in the frosting, halved the icing sugar too.

    everyone loves it. I just make the cake not the frosting and its delicious.
    It turned out great. It was easy to make. I only made half the frosting and had plenty. My family loved it!

    The cake itself was moist & delicious . However...if you follow the frosting part of recipe, you'll end up with 3 times the amount of frosting you need. We actually attempted to use all the frosting, & ended up scraping over half of it off. It was completely overwhelming. So, please make the cake, but do half the frosting recipe (& that's still a bit too much)

    I added a 1/2 tsp nutmeg and walnuts to the cake. Only used 5 cups of icing sugar in the frosting. It was really sweet already but it did end up a little thinner than I’d prefer. Did have lots left over too. Will tweak that part but the cake was awesome and moist.

    So good! It turned out really moist and spongy. I added 1/2 tsp of nutmeg aswell. I would recommended this to anyone and will only use the recipe from now on 💯

    The recepy and the ingredientes are easy. I changed all-purpouse flour for oatmeal flour and I added lemon to the cream cheese frosting +less sugar. turned veeeery amazing, a must!

    The cake turned out moist and delicious. I think though the amount of sugar was a bit too much. The cream cheese frosting is sweet enough. I soaked raisins in warm milk for a half hour and added that to the recipe. Other than that it was a good recipe. Will do it again. Thanks

    It turned out good. Next time I'll add Nuts & Raisins. 8 Cups of frosting was too much. Only needed 6 Cups.

    Please proofread your instructions. Eight cups of powdered sugar is an ENORMOUS amount. I used two cups and it turned out fine. Aside from that (probably) typo, this is without doubt the BEST carrot cake I've ever made. I think it set a record for the how quickly it disappeared! The tip for making the cake moist is so obvious that I'm surprised it's not common knowledge! I'm going to do that for every cake from now on!
