  • 5 1/4 ounces mixed greens
  • 15 ounces baby beets (drained, halved)
  • 1 bunch asparagus (trimmed, blanched)
  • 1/2 bunch fresh mint leaves
  • 1/2 pound haloumi cheese (cut into thin slices)
  • 1 tablespoon olive oil (+ extra, to serve)

    Directions

    1. Distribute mixed greens, beets, asparagus and mint between 4 serving plates.
    2. Heat a large frying pan over medium heat. Brush haloumi with oil and season. Sear for 1-2 mins per side, until golden. Arrange over salad.
    3. Serve drizzle with olive oil and lemon wedges on the side.
