- 6 dried shiitake mushrooms
- 8 cups water
- 1/2 cup yellow miso (or sweet white)
- 2 Tbsp. tamari (optional, depending on saltiness of miso)
- 1 lime (or lemon, to taste)
- 8 oz. extra firm tofu (or firm, in 1/2″ cubes)
- 12 oz. shiitake mushrooms (ends trimmed, sliced, about 6 cups)
- 3 Tbsp. toasted sesame oil (divided use)
- 3 Tbsp. tamari (divided use)
- 2 tsp. Sriracha (depending on how spicy you like it)
- 16 oz. soba noodles (depending how noodley you like it)
- 1 bunch kale (stemmed and slivered)
- 2 scallions (large or 3 small, washed, trimmed, slivered)
- toasted sesame seeds (or gomashio, optional)
- togarashi (optional)
