- 10 grams ginger (fresh grated)
- 150 grams medium tofu (fresh)
- 1/2 tsp. rice wine vinegar
- 1/2 tsp. tamari
- 100 grams shitake mushrooms (~8-10 mushrooms)
- 1/2 red chilli (finely sliced – optional, leave out for nightshade free)
- 1 pinch gochugaru (Korean chilli powder – optional, leave out for nightshade free)
- 400 mL boiling water
- 2 tsp. miso paste (or according to directions)
- 1/2 sheet seaweed (dried, I used a nori seaweed sheet for sushi)
- toasted sesame seeds (to serve, leave out for sesame free)
