Nice variation on a potato soup - with carrots! My daughter loved it, which makes it a winner for me! I might try it with less coconut oil next time; not sure it’s necessary. I & my family found it to be too peppery, and I only used half the amount! I also used only 3 tbsp of coconut milk...BUT, I was using coconut cream, so I added 1/2 cup of water. (Note: don’t buy Safeway brand coconut milk!! It is mislabeled “coconut milk,” but it is solid when you open the can. And just a look at the ingredients tells you it is NOT coconut milk.)
