- 12 oz. linguine pasta (broken in half, this it to fit into the pot - if you've got a wide pot, you can leave them whole.)
- 28 oz. diced tomatoes
- 1 onion (thinly sliced)
- 4 cloves garlic (diced or sent through a garlic press)
- 4 1/2 cups chicken (or vegetable broth or stock)
- 2 tsp. oregano (use tablespoon for more flavor)
- 1/2 tsp. crushed red pepper flakes
- 1/4 tsp. salt (or to taste. I thought it needed a bit more)
- 2 Tbsp. olive oil
- 2 Tbsp. fresh basil (chopped, I used more)
- 1 Tbsp. grated Parmesan (more for serving, if desired)
