These were fabulous! I did tweak the recipe a bit to make them a tad healthier. I used white whole wheat flour, unsweetened applesauce for half of the butter, cut the sugar back, and more food coloring.

It turned out really good! I put in a little more food coloring to make it appear greener. I would suggest to add an extra 1/2 teaspoon of mint extract if you want the mint flavor to be more pronounced. Other than that, it was delicious!
